Food is an expression of love. I am sure most of us have baked something to give to another or been the recipient of a homemade dish from a thoughtful friend. If food really is an expression of love, then my friend Essie and her kitchen are overflowing with love for her friends, neighbours, and family.
It’s Essie’s recipe for chocolate cake that gets the most rave reviews. About 20 years ago, she discovered the recipe on the back of the Hershey’s cocoa package. However, she recently noticed it is no longer appearing on containers in Canada. There are a lot of memories and emotions attached to this cake for Essie.
There was the time her brother had to stay home to work while his wife and family went away on holiday; Essie surprised him with a few of his favourite dishes – turkey soup and the chocolate cake. He was so thankful and told her he had soup, cake, and a cup of tea every night while watching TV, and also packed them in his lunch for the entire week. She thinks he was secretly delighted he didn’t have to share with anyone.
