I made this fresh cucumber salsa this past week and I really liked it. I cut a couple of tortilla wrappers into triangular pieces, brushed them lightly with olive oil and sprinkled them with salt. I toasted them in the toaster oven at 300 for 10 minutes and they were great for dipping into the salsa. When I made it, I used quartered grape tomatoes and added some chopped celery to the original recipe. I also used chopped green onions in place of the red onion and only added half of an orange pepper to the mixture.
A reader sent me this recipe for easy pudding cake and it is, as it says, so very easy. I used a French vanilla cake mix as that is what I had available and instead of a vanilla pudding I used a cheesecake flavoured instant pudding that my friend, Michelle, finds for me in the States. I haven’t found them yet in Canada. The finished dessert does, of course, need to be kept in the refrigerator, but it certainly won’t last very long as it is delicious. Be sure to pour the vanilla pudding into the holes as soon as you finish mixing it as it won’t go into them well once it starts to thicken. I sent one to Grand River Vet Clinic where my granddaughter, Camryn, has her summer job and it was a hit.
My friend, Sharon Kennedy in Australia, sent me this recipe for salmon patties that she recently made. She said they were delicious. She served them with Caper mayonnaise and a side salad. If you don’t have capers, you could just omit them and add a touch more dill for extra flavour.
