A reader recently requested some recipes using fresh green beans and I immediately thought of the one that my sister-in-law Eleanor Parsons makes. Eleanor adds sliced mushrooms and cooked chopped bacon to the mixture for added flavour and crunch.
I find that some people don’t like a creamy sauce on fresh vegetables, so I am also sharing a green beans with bacon recipe from the Haldimand Norfolk Senior Support Cookbook. This cookbook contains many family favourite recipes and is a book that I often refer to.
The Sassy Green Beans recipe has an interesting combination of spices and a tomato sauce. I have not tried this one yet but certainly intend to as I think it looks like a good one.
I have also shared two different crock pot green bean recipes because with this hot weather we have been experiencing it is a good way to enjoy fresh beans and not heat up the kitchen.
Any of these dishes could be made using yellow beans or a combination of both green and yellow beans if you prefer that.
