When your oven breaks on Boxing Day and you haven’t baked since, you try to come up with different stove top things. I think my grandson Aaron, Tim’s Tire, Jason’s workmates, the bank staff, etc. are tired of chocolate coconut macaroons (mud and worms), so I decided to make Rice Krispie squares today. They felt boring, so I added 2 cups of chocolate chips and a Tbsp. of peanut butter to the melted mixture and they turned out just fine. I iced them with more chocolate. 

I baked the chicken for this chicken salad in my toaster oven and it worked out well. I like chicken and cranberries together, and the chopped apple certainly was a nice addition. I used plain Greek yogurt instead of the mayonnaise. I enjoyed it on its own and then tossed some into a lettuce salad in place of dressing and liked that, too. 

I was sent this teriyaki chicken recipe by a friend down east but haven’t tried it yet. It is on my list of things to try when the part for my oven arrives and is installed. The recipe as shown serves 4 to 6 people. I have included my seasoned salt recipe here as it was requested by a couple of readers recently.
