

Laura & Bill
When you first meet Laura, you are immediately drawn to her warm and friendly disposition. You get a sense this woman is fun and joyful. Laura is one of two advertising sales representatives working on a part-time basis for The Haldimand Press. Laura is originally from Vancouver. She and her husband Bill were living in Hamilton and felt the time was right to downsize and find a little slower paced life. During Covid they moved to Caledonia and have been loving Haldimand County ever since.
After being cooped up in the house during the pandemic, Laura said she was looking for part-time employment that would get her into the community and hoped to work for a woman-led business. During her interview with Jillian and Kaitlyn, she felt a strong community connection and she knew she found what she was looking for. As an advertising rep Laura gets to travel throughout the area connecting with local businesses.
Laura admitted to me she is not much of a cook and her husband Bill does most of their meal prep. However, this chicken with herbs recipe she has shared is one that she actually makes herself! She loves that it takes only five minutes to prepare the bird before it’s ready to pop into the oven. In addition, there are no hard and fast rules on quantity of each ingredient. She recommends using fresh herbs rather than dried because it tastes so much better. Perfect if you grow your own, but you will also find fresh herbs at your local farmers market or at the grocery store. Laura confided with a laugh, “I use a lot of butter and wine!” Just like Julia Child said, “With enough butter, anything is good.” Laura and Bill will add roasted potatoes, a side salad, and some green beans to top off this excellent meal.
