While rummaging through the freezer, I found a forgotten pork tenderloin purchased months ago. Looking for recipe inspiration I went to the website ontarioporkrecipes.ca. Ontario Pork is an organization that advocates on behalf of the 1,192 pork producers in the province of Ontario. The website includes nutritional data, how to cook pork, industry facts, and recipes.
I chose the barbecue pork tenderloin recipe. As I don’t own a barbecue, I decided to bake the pork in the oven at 425°F.
My challenge when roasting meat is trying not to overcook it. I recommend checking your meat with a meat thermometer after it’s been roasting for 15 minutes. The website states that pork should be cooked until it has reached an internal temperature of 155°F (68°C), then rest until it reaches the Health Canada recommended internal temperature of 160°F (71C).
To accompany the pork, I chose to pair it with roasted cauliflower. This recipe includes a spice option to add some international flair to your simple meal. I roasted the cauliflower on the same sheet pan as the pork, which makes it easy. Enjoy!
