I have had a request for some recipes using rhubarb. I have shared my sister-in-law, Eleanor Parson’s, rhubarb pie here over the years and although it remains my favourite rhubarb recipe, I do like the ones I am sharing today.

Rhubarb streusel muffins are not difficult to make and are really delicious. Do let them cool for 10 minutes before removing them from the muffin tin as they are really moist and will be difficult to get out if they are too warm. I prefer to use pecans when I make them, but walnuts are good, too.

Jan Gilchrist’s rhubarb oatmeal crumble is also a good recipe. I like it served slightly warm with a dollop of ice cream on top.

I usually make the rhubarb jam that is on the liquid Certo package, but when I saw this recipe recently I thought it would be a good one to try this year.

My friend in Simcoe sent me this recipe for rhubarb sour cream coffee cake and although it is one that I haven’t made yet, she makes it and really likes it.
