When it was discovered that I had a wedge fracture in my spine this past March I was warned by my favourite retired nurse, my doctor, and my physio-therapist that I must not lift anything heavier than my hand until it heals. Gee, I can’t even vacuum! Consequently, I have been taking it a bit easier and spending time going through (and getting rid of) some of the cooking magazines that I have accumulated. I love to try new recipes and this past week I tried all three of these. This parmesan asparagus is very easy to make and delicious. Although the recipe suggested shredded parmesan, I used grated parmesan. Be sure to not over bake it. It only needs 10 minutes as suggested. I used to love cornmeal muffins that my grandma made and when I saw this recipe for cornmeal cheese loaf, I thought it looked like a really good one. I toasted a couple of slices and enjoyed a great toasted tomato sandwich. I also had my poached egg on a slice of it for breakfast the next day and that was really good, too. My grandkids like s’mores and so when I saw this recipe, I thought I would make some for them. I have made them a few times since as they are so simple to make and really delicious. My granddaughter, Kally, suggested using Caramilk bar pieces in the centre and they created a delicious flavour. You can eat them cold or simply heat them in the microwave for a few seconds.
