I don’t leave my home when it is icy because I have a habit of falling and breaking things, so the weather this past week has been a good excuse to try some new recipes. Like I need an excuse! I had some fresh cauliflower in the fridge and wanted to use it up so when I saw this recipe for cauliflower and broccoli casserole in the Grandview Lodge cookbook, I tried it. I didn’t have any broccoli so I did alter it a bit, but it turned out to be a really great way to enjoy cauliflower. I enjoyed it with crustless quiche made in muffin cups. They only keep well in the fridge for 4 days. Put a paper towel in the bottom of the container because the vegetables give off a lot of moisture.
I found this cherry loaf recipe but didn’t have any cherry pie filling on hand, so I made it with strawberry pie filling. When I had it mixed, I thought it needed more fruit so I added about ¾ cup of frozen blueberries. I had to bake it about 10 minutes longer, though. I was pleased with the way it turned out and even enjoyed some for breakfast. It is a very moist fruit bread.
