
It was a busy weekend in my kitchen! It all started with a visit with my Auntie Anne when our conversation somehow wound around to the eggplant. This is one vegetable I have never cooked and only eat if she makes it. I was however, in the mood to try something new so, I asked for explicit instructions on how she cooks it. Surprisingly, I was very happy with how mine turned out and everyone I shared the eggplant with seemed to like it.
